Beef and Pearl Barley Stew

When it turns to the colder months of the year, stews and casseroles are a weekly rotation in my household. Firstly I love the ease of chucking all ingredients in one pot and secondly it's great for warming you up, especially if you have been out of the house for the day.

Pearl Barley in Stews and Casseroles

Pearl Barley is a great ingredient for adding into stews, casseroles and soups, it will bulk out the meal making it much more filling and means you don't have to use quite as much meat, which can sometimes be expensive.

I buy bulk bags of pearl barley from the grocery store as it always comes in handy having some in my pantry cupboard.

Vegetables for Beef and Pearl Barley Stew

The beauty of a stew or casserole is that you can really add in any vegetables you like, whatever you add will bulk out the meal and flavour the broth or gravy.

For this I used what I had on hand which was onions, carrots, mushrooms and then some kale right at the end. I love to add Kale as it's rich in iron, fibre and is a super food. But cabbage would be great too if you don't like the strong flavour of kale.

Can I use another type of meat in this recipe?

If you want to use something other than beef, I recommend some chunks of lamb which will require a similar cooking time, while something like chicken thighs would work, they will require a lot less cooking, and will need too much of an adjustment.

I don't ever recommend anything like chicken breasts in a stew or casserole, they really don't take long to cook and long cooking like this will just make the meat very dry and not very appetising, plus because they are so lean, they don't release much in natural juices which flavour a casserole or stew.

So stewing lamb or beef is the best option for this recipe.

Can this be cooking in a Slow Cooker or Instant Pot?

I haven't yet got round to making this using my slow cooker or instant pot, it's a recipe I always tend to make on the stove top in my Le Creuset cast iron pan.

So without testing it first I wouldn't like to comment on how this will work, adjustments will be need in the liquid and cooking times. Watch this space though, as soon as I test it out in one of those methods I will be sure to update.

Sides for Beef and Barley Stew

I usually eat this just as it is in a bowl, because of the vegetables and pearly barley it's filling enough on it's own and I don't need any sides.

But if you fancy a side to pair this with, here are some great recommendations:

  • Mashed Potatoes
  • Rustic Garlic and Parmesan Mashed Potatoes
  • Cheddar and Spring Onion Mash
  • Sweet Potato Mash
  • Crushed Roast Potatoes
  • Garlic and Herb Roast Potatoes

or if you fancy some bread, this Oat Soda Bread which uses a HEb choice is perfect.

  • salt and black pepper
  • cooking oil spray (I used avocado)

Instructions

  1. Spray a large pot over a medium high heat with some cooking oil spray
  2. Add the beef in batches, seasoning with salt and black pepper and fry till lightly golden, remove and set aside
  3. Add the onion, and fry to soften. Add a couple of spoonfuls of either stock just to deglaze the pan.
  4. Add the garlic, carrot, mushrooms, thyme and rosemary, paprika, splash of balsamic vinegar and tomato paste
  5. Add back in the stewing beef (including juices) and stir to coat.
  6. Add all the stock and bring to a boil, reduce heat to low, cover with a lid and simmer for approx 30 mins
  7. After 30 minutes, add in the pearl barley, and then continue to simmer for an additional 45 minutes until pearl barley is cooked and meat is tender. If you like more broth on your stew, you can add some more stock as needed.
  8. Add in the kale for the last 10 minutes, taste and season as needed with salt and black pepper.
  9. Serve Enjoy!!

FAQs

What is the secret to good stew? ›

For most types of stew, it takes time to develop great flavor. Stew uses collagen-rich, tough cuts of meat, which need at least two hours to break down. If you try to rush it and boil the stew, the muscle fibers will shrink and become tough. So give yourself a few hours to let it do its thing.

Why does my beef barley soup have no flavor? ›

Browning the meat in large pieces adds deep, roasted flavor, without the over-toughening that happens when you brown it in smaller pieces. Sautéing the vegetables, then adding them back to the pot toward the end of cooking, ensures that they don't become flavorless bits of mush.

What to add to beef stew to make it amazing? ›

Vegetables: small chopped carrots, celery, and onion or shallot practically melt into the sauce. Mushrooms: button mushrooms are a nod to the quartered mushrooms many classic beef stew recipes call for, but are thinly sliced instead of being left in bigger pieces. Garlic: minced garlic brings lots of cozy flavor.

What gives beef stew depth of flavor? ›

Aromatics. Like rosemary, thyme, and bay leaves. The base of the stew also uses onion and garlic for the best depth of flavor. I prefer to use fresh herbs when I can (though I haven't been able to find a fresh bay leaf in years), but include notes in the recipe to substitute dried herbs.

How do you deepen the flavor of stew? ›

Add the wine and tomato paste to the onions and other aromatics in a pan before slow cooking. Plus, this helps to really deglaze any fond that's left. This ingredient is one that your mum and nan would probably use in their stews. It adds a bit of tang, sweetness and savoury spices that give an extra punch of flavour.

Does barley need to be cooked before adding to soup? ›

Do you cook barley before adding it to soup? Your beef barley soup will simmer long enough to cook the barley. There is no need for the additional step of cooking the barley first. The barley takes about 30 minutes to cook completely.

How to thicken up beef barley soup? ›

Beef Barley Stew: Transfer your pot of soup into more of a stew by thickening it with tomato paste (or simmering it in the slow cooker with the lid off until it reaches your desired consistency).

What if I put too much barley in my soup? ›

As barley is a starch the best you can do is dilute it, or thin it out a bit. You may need to add a fair bit of broth and more of your vegetal ingredients. Possibly to the point of doubling your recipe. It will depend on when you find the taste and texture to have gotten back to acceptable levels.

What vegetables are good in beef stew? ›

Although I added carrots, little red potatoes, rutabaga and cremini mushrooms, you have plenty of options. Parsnip, turnip, pearl onions, squash and fennel will also work. Stir them in gently and immediately return the pot to the oven for the final hour of cooking.

What is the tastiest meat for beef stew? ›

Go for the chuck

The most common beef used for stew is chuck steak, also known as gravy beef or braising steak. Beef chuck comes from the forequarter of the animal consisting of parts of the neck, shoulder blade and upper arm.

Why do you put brown meat in stew? ›

Very simply put, browning equals flavor. As beef sears, the outside caramelizes, adding extra flavor to the beef, not to mention creating these tasty little browned bits that form on the bottom of the pot. Without browning, the finished stew just won't taste as good and the sauce won't be as dark.

What is the secret to tender beef stew? ›

The most important key to making stew meat tender is being sure to cook it for a long time. If you want super tender beef, you'll need to cook it on a low heat in a Dutch oven on the stove or a slow cooker for at least a few hours.

How do you fix a tasteless stew? ›

Personally I would add as many aromatics and flavor enhancing substances that I like. If the stew is already finished, then you can sauté onions, garlic peppers, celery and carrots then add them to the stew. I would also add some herbs and finally salt and pepper to taste.

How do you make stew meat more flavorful? ›

Sear the meat well.

Searing meat takes a long time, and it's tempting to skip it. Don't. Searing the meat until it develops a dark brown crust and a sticky “fond” starts to glaze over the bottom of the pan are both key to creating the kind of rich, caramelized flavors that make stews irresistibly good.
